STRAWBERRY CITRUS POWER BOWL

SERVINGS: 1


1 Skinless, boneless chicken breast

1 c Spring salad mix

¾ c Diced cucumber

¾ c Sliced strawberries

½ orange (segmented, halved)

2 T Chopped walnuts

2 T Crumbled goat cheese


1. Season chicken and cook to your preference (grill, bake). Shred when cooled.

2. Combine in a bowl: spring salad mix, cucumber, strawberries, orange segments, chicken, walnuts and goat cheese.

3. Add honey mustard dressing.

4. Mix and serve.


SAVE TIME IN THE KITCHEN: buy rotisserie chicken or pre-cooked chicken breast, precrumbled goat cheese


HONEY MUSTARD DRESSING

1 SERVING = 2 TABLESPOONS


¼ c Greek yogurt

¼ c Honey mustard

1 T Apple cider vinegar

Salt + pepper


1. Blend ingredients together.

2. Pour over power bowl before eating.

3. Mix and serve


SUBSTITUTIONS: Renee's Honey Dijon Vinaigrette, Hellman's Honey Dijon Dressing, Kraft Creamy Honey Mustard Dressing
