GINGER SESAME TOFU POWER BOWL

SERVINGS: 1


3 oz/85g Firm tofu

½ c Sushi rice

1 c Chopped romaine lettuce

¾ c Shelled edamame beans

½ c Diced cucumber

¼ c Sweet pickled onions

¼ Avocado

1 Diced green onion

1 T Sesame seeds


1. Cook rice as per package instructions.

2. Drain and press tofu, cut into 1-inch cubes. Toss in soy sauce and bake on a parchment-lined sheet for 20 - 25 minutes at 425F (or until browned).

3. Combine in a bowl: lettuce, rice, edamame beans, cucumber, avocado, green onion, sesame seeds, and tofu.

4. Add ginger soy dressing.

5. Mix and serve.


SAVE TIME IN THE KITCHEN: substitute sushi rice for Uncle Ben's microwaveable white or brown rice, buy pre-baked tofu, pre-chopped lettuce, and frozen shelled edamame beans


GINGER SOY DRESSING

1 SERVING = 2 TABLESPOONS


⅔ c Soy sauce

2 T Rice vinegar

4 t Chili Paste

2 t Crushed ginger

1 t Crushed garlic


1. Whisk all ingredients together.

2. Pour over power bowl before eating.

3. Mix and serve.
