SUMMER FRESH POWER BOWL
SERVINGS: 1
1 Skinless, boneless chicken thigh
½ c Basmati Rice
1 c Chopped romaine lettuce
¼ c Diced cucumber
¼ c Diced orange bell pepper
1 T Diced onion
¼ c Corn kernels
2 T Sliced almonds
2 T Parmesan cheese
Fresh cilantro
Fresh basil
Fresh dill
Fresh mint
1. Season chicken and cook to your preference (grill, bake). Cut into cubes when cooled.
2. Cook rice as per package instructions.
3. Combine in a bowl: lettuce, cucumber, orange bell pepper, onion, corn, rice, chicken, handful of fresh cilantro, basil, dill, and mint.
4. Top with sliced almonds and shredded parmesan cheese.
5. Add summer fresh dressing.
SAVE TIME IN THE KITCHEN: buy rotisserie chicken or precooked chicken thigh, Uncle Ben's microwaveable basmati rice, pre-cut lettuce, can of corn, pre-shredded parmesan cheese
SUMMER FRESH DRESSING
1 SERVING = 2 TABLESPOONS
1/3 c Olive oil
1/4 c Lemon Juice
2 T White vinegar
1 T Rice vinegar
3 T Dijon mustard
1 T Italian Seasoning
Salt + Pepper
Whisk all ingredients together.
Pour over power bowl before eating.
Mix and serve.
SUBSTITUTIONS: Newman's Own Light Olive Oil and Vinegar, Kraft Oil and Vinegar Dressing, Renee's Spring Herb Italian Vinaigrette
